A Good Wild Salmon Catch

We are happy to say that the wild salmon catch of summer 2024 was better than it has been for a long time with some fisherman, although not all, reporting that fish were so plentiful they’d taken their entire, albeit small quota in one day’s fishing. We also have had more fishermen than usual landing exclusively to us.

 

Fair prices and wide choice of sizes

Our fair price for wild salmon this year reflects this relative bounty and we hope it means more people will be able to enjoy this most iconic Irish delicacy. We have a good range of sizes too.

 

Irish Cultivated Fish

When Frank started out as a smoker four decades ago, he smoked only wild salmon for years, until 2006 when fishing at sea for wild salmon was banned and only draft net fishing onshore was allowed. Since then - nearly 20 years - we’ve developed our process to smoke Irish cultivated fish, all produced sustainably in small farms on the west coast of Ireland by MOWI.

 

Lean & delicious Smoked Salmon

We are not organically certified ourselves but our process adds only salt and smoke to the excellent raw material we buy. The flavour and finish is the very best it could be - a far cry from the flabby, oily rather bland - often not Irish - varieties you can get elsewhere.

 

A singular smokehouse

All Hederman smoked salmon both Irish wild salmon or Irish cultivated, is lean, tender and sweetly smoked, thanks to our hanging method and our smokehouse, the only timber smokehouse in Ireland, whose unique atmosphere lends unforgettable character and texture to our fish. (In case you’re wondering, other smokers smoke flat on racks in automated kilns, and this is what sets us apart.)

 

Over 65 years combined experience

 The skill and experience of our smoking team, as Dan and Tom rack up their own decades of experience to add to Frank’s 42 years, is also integral to our unparalleled quality.  Quite honestly, you will be hard pushed to find smoked wild  salmon that tastes as good anywhere else.
